Try Your Luck In Making Quinoa!

Quinoa Vegetable Bake

Ingredients

1 cup of quinoa, completely rinsed

1 ¾ cups chicken broth

2 T olive oil

1 large onion, diced

2 cups of chopped broccoli

¼ tsp mineral sea salt

1 roasted red pepper, diced

2 T pesto

2 eggs

1 cup of shredded gruyere cheese

1 cup of low fat ricotta cheese.

½ cup non fat Greek Yogurt

Additional cheese for the top (optional)

Directions

Firstly, preheating the oven up to 350 degrees, you need to spray olive oil to the pan.

Secondly, make a mixture of quinoa, salt and broth. Then bring this mixture to boil. After reducing the heat to medium low, continue cooking for 12-15 minutes.

Thirdly, apply medium heat for olive oil and then add onion. Cook for 10 minutes and make sure that the mixture gets softened. Then you need to add broccoli and sauté for 2 minutes. After adding red pepper take another 5 minutes for cooking. At last remove it from heat and tilted in quinoa.

Fourthly, add eggs with cheese, ricotta and yogurt. Let’s combine it with the quinoa mixture in addition to vegetables. Now bake for about thirty five minutes to get your desired dish.
